Delicious tarts with mushrooms, onions, gorgonzola and mozzarella cheeses with spring mix and a drizzle of balsamic vinaigrette.

Directions
Preheat oven to 375 degrees. Line a baking sheet with aluminum foil. Spread 1 puff pastry sheet out and cut it into 4 pieces. Place the 4 pieces of puff pastry on the prepared baking sheet. Poke holes in the squares with a fork. Set aside.
In a large skillet add olive oil, sliced onions and mushrooms, sautéing on medium heat high heat until softened.
Divide and spoon the onion mushroom mixture on the 4 puff pastry squares.
Sprinkle with desired amount of gorgonzola cheese. Then sprinkle with shredded mozzarella cheese, salt and pepper. Bake in the oven for 20-25 minutes or until puff pastry is golden brown. Allow tarts to cool for 5-10 minutes on the baking sheet then move them to a serving dish.
While tarts bake make balsamic vinaigrette. Combine all the ingredients in a small bowl and mix.
Once tarts have cooled for a few minutes, add spring mix to their tops and drizzle with balsamic vinaigrette dressing and enjoy!
